Using single origin beans, meaning that they come from a particular area or farm, many of these new roasters are revamping what it means to be a New York cup of coffee. At places like Gimme Coffee (Noho, Williamsburg) and Joe (various locations, with a new one on the Upper East Side) the baristas are trained professionals and don’t mess around. Only beans roasted within the past 10 days are used, and all are ground to order.
If you find yourself waiting 10 minutes for a shot of espresso, don’t be alarmed. It’s not the lines, it’s the barista making sure that the grounds are evenly tamped, that the water temperature is just right, and that it isn’t exposed to air for too long (10 seconds is about the average time it takes for an espresso to go stale, unless mixed with an additive like cream, whereby it becomes a macchiato).
